my firmware version is still v.10 but there's no firmware update right now through the software updater for my device. what should i do??

then u need to wait untill the new firmware is out for your product code / country, it should take any long

How did you get so many apps on the shortcut menu and the 3 touch buttons at the bottom?

its not possible, max 4 shortcuts. its the theme application that shows more than 4
