sounds to me like you damaged the sis install registry which is kind of like screwing up the windows registry. if you don't have a backup of it you would be better off doing a Hard reset just to be safe.

There is a list of all the files and their locations in this thread. about the only ones not listed are the c:\ boot folder and its contents.
As for the registry files, like i said, it's hard for me to say. The registry can get complicated because it has both an install & uninstall dir which i can't even identify at the moment. Symbian is not as simple as just deleting files to uninstall an app. For one thing, if your phone is not hacked then there is no way into the private folder to delete the files you wish to delete. Not only that there are other files inside that are created to help the system keep track of the install. But the bottom line is even if you delete every file my file installed the system created it's own files and I really can't track them all down. About the best i can do is give you all the files and you will need to install them manually. This may get Pimp Juce to work again but you wont be able to install or uninstall it.

On another Not I know many of you are trying to cook this to a rom although that may seem like a way to save memory or a one stop solution. consider this. You're spending all this time doing something that is much easier to Just install and it's getting constant updates.
If I were you guy (which I am actually) I would not even bother until the updates slow down.

First off, THANK YOU! Bronxboy for your efforts in making our phones that much more better, hope you continue with the amazing work

I was browsing this post for a while decided to finally install the V8 4 beta, and it works wonders on my N97 mini.
I installed it without x-plore on my phone, for those that are asking about it working on NON_HACKED phones... YES it works

    what I found was...

-The browser works much more faster

-the scrolling is much better and smoother in all the screens( this is reason alone for those who have heavy themes etc.)

    - camera does indeed seem better from... b4 and after pictures taken

-OS and applications feel much more smoother, and responsive

have not had any issues with installation, and thereafter ...will keep you updated if anything funny occurs :P

One thing which I was uncertain about is how to go about uninstalling Pimp Juice if a better version were to come around?
.. would I need X-plore? if its one file where is it located, or is it all different files in the phone?

    thanks in advance
