Dudes, just get Xmedia Recode. It has a 5800 setting, and you can manually change the video settings, audio settings etc. and it's FREE.

Hi! Just want to share you this video conversion guide for 5800. Here's the link for the software used MEDIACODER and using ZUNE Video Converter: http://www.tipidcp.com/viewtopic.php?tid=5841&page=205 - the procedures are in English. Thanks for Orochi and Rufela of TIPIDCP for sharing this.

Another great and easy to use app is OJOsoft's Total Video Converter.
It can convert from pretty much any format (including MKV!) to MP4 (and a lot of others).

Unfortunately, it's not free, but it's well worth the money. I converted a 1min MKV file in about 1min 30sec.
It even gave me the possibility of adding subtitles to a MP4 if the MKV had at least one (because you can choose which).

Also, to my surprise, I saw that playing a 4mbps clip on the phone is silk smooth.

Set codec to MP4, AAC, AAC and 1024 bitrate (video) & 29.9fps. It plays perfect on mine.
